NUMA Restaurante: signature cuisine inspired by the Algarve in Portimão
In Portimão, NUMA Restaurante presents contemporary, Algarve-inspired signature cuisine. Local, seasonal produce, precise technique and attentive service come together in an experience that is, above all, a way to discover the Algarve at the table.
An intimate space with a semi-open kitchen, made for unhurried dinners, from celebrations to an evening for two.
ABOUT US
Our story
The name NUMA brings together the initials of NUno Martins and MAnuela João, the couple who opened this restaurant to fulfil a family dream.
Nuno leads the kitchen and Manuela welcomes guests in the dining room. Together they have created a place in Portimão where the culinary heritage of the Algarve and Portugal meets contemporary cooking, in a style that is elegant yet relaxed.
The Cuisine
NUMA´s cuisine starts from what the Algarve offers in each season. Fish from the local market, oysters from the Ria de Alvor, Silves citrus, Monchique olive oil and Castro Marim flor de sal come from small producers and markets across the region. Seasonality decides what goes into each menu, and a zero-waste approach ensures every ingredient is used in full.
Tasting menus:
Two menus, two portraits of the Algarve.
NUMA menu: Interprets the flavours of the Algarve sea and the Ria de Alvor.
ESTAÇÃO menu: Follows the seasonality of those flavours and adds the Barrocal, the Algarve’s limestone hinterland.
À la carte
The à la carte menu reinterprets traditional Algarve cooking. One example is octopus with textures of sweet potato: octopus from the Algarve coast, sweet potato from Rogil (Aljezur) and traditional chouriço from Zambujal, bringing together the sea and the Barrocal.
Menus com História (Menus with History)
In partnership with the publisher A Bela e o Monstro and the Portuguese newspaper Público, NUMA takes part in “Menus com História”, a special edition exploring the roots of Portuguese cuisine. The Chef reinterprets coelho de cebolada à portuguesa, a rabbit and onion stew based on a recipe from 1780, and sopa culi de camarões, a prawn coulis soup. Available until the end of the year.
Wine
NUMA’s wine list features 205 references across different regions, grape varieties and producers, with a focus on Algarve wines. Senior Sommelier Paulo Duarte and Junior Sommelier Rafael Martins pair each menu with wines chosen for the Chef’s cuisine.

SIGNATURE CUISINE | IDENTITY, PRECISION AND TERROIR
Born in Portimão, Chef Nuno Martins has built a career defined by high standards, technical precision and a passion for fine dining. A civil engineer by training, he returned to the kitchen in 2011, having taken his first steps in hospitality at a young age.
He trained in professional cookery and pastry at Turismo de Portugal and IEFP, Portugal’s national tourism and training institutes, where he is now a certified chef trainer. His career includes leading kitchens in the Algarve, such as Bon Bon, Vila Vita Parc, Vila Lara and Leão de Porches, as well as the United Kingdom, where he was Executive Chef of the Dunes Group.
At NUMA, he reinterprets Algarve produce, from sea to mountain, through contemporary techniques that bring out its original flavour, the purity of its broths and the balance of textures.
